    economic perspective= it takes time to skin the salmon in a kitchen time=money
    the best and easiest way to serve salmon is crispy skin salmon

    @johnosandra believe me I know a shitload more about Hospitality than you, even if not about how to make a salmon skin that little bit more crispy (which is funny cause I have never had any complaints before). Fact of the matter is, that whether or not you can actually leave them on, the vast majority of chefs that I have worked with would cock it up far to regularily for it to be economicaly worth it from a head/executive chefs position.

    As for SCALES left on the salmon not nice.

    I went out for dinner the other night & I had Salmon with rocket mash w rocket salad tossed with the best parmasen cheese and the salmon drizzle with a vanilla sauce which was just divine. When I first read the menu I thought what the hec vanilla sauce!! w Salmon, but hey I said I’ll try that something new and different… To my amazement all the combinations came together lovely. !

    @CTRLALTDELmusic actually, i thought that to begin with but tried it with the scales on. It adds to the crispy skin. Perhaps you should actually just follow his directions and you will see, this is how it is done properly.

    he’s right, it is real easy. it’s funny that some of the people on hells kitchen couldn’t even cook fish properly. im 17 and have no cooking experience and yet I can cook fish almost as good as Ramsay.

    I didn’t use crab meat… i use prawn/shrimp instead… easier and cheaper…!!!!!

    I tried out the salmon and it was GOOD! actually i also sprinkled dried rosemary and cajun on top. Even more tasty! Thanks for this. You made it look sooo effortless.
