One drawback – your oyster shucker, although they did a good job of it, was slow in the shucking process & used a sgain-dubh, the wrong blade for the job. They need a stainless-steel oyster-shucking knife. It’s not as elegant but is far more efficient. With it all it takes is a quick wrist-twist at the hinge with the appropriate leverage the top & the oyster can be popped open and the top of the muscle cut at the top shell with a follow-through slice without ‘scrambling’ it.
