Christmas Dinner Recipe: Brussel Sprouts with Chestnuts – Christmas dinner needs that special something to make it a memorable and delicious meal. Why not try a delicious combination of boiled sprouts and chestnuts. This pairing promises a mouth watering experience. Impress your family and friends by following the recipe below. Ingredients * 1 bag of sprouts * 200g box whole chestnuts (Merchant Gourmet) Method 1. Prepare sprouts and gently cook in boiling water for 6 minutes. Drain and return to hot pot and place lid on top to keep warm. Add small knob of butter. 2. Heat whole chestnuts in microwave for 1 ½ minutes then toss through sprouts and transfer to serving dish. Christmas Dinner Recipe: Roast Potatoes – Christmas wouldn’t be Christmas without perfect crispy roast potatoes. I use a delicious blend of Scottish rapeseed oil and seasoning to give a slightly nutty flavour. Ingredients * 1 bag potatoes * Rock salt * Black pepper * Rapeseed oil Method 1. Peel and par (or partly) boil potatoes for 45 minutes until slightly soft. 2. Pat dry. 3. Place potatoes on a roasting tray covered in rapeseed oil, black pepper and rock salt. The potatoes will soak up oil. Leave for ten minutes then turn. 4. Roast in oven at a low heat for an hour before serving. When turkey comes out of oven turn heat down to 170° and leave to cook, turning occasionally. Christmas Dinner Recipe: Cranberry and Plum Sauce – Every Christmas dinner deserves the sharp tangy flavour of fresh cranberry sauce, made that little bit special with the addition of some plums and a dash of port. To create the perfect accompaniment follow the recipe below. Ingredients * 250g cranberries (fresh) * 340g plums in syrup * 2 oranges (zested and juiced) * 1 cinnamon stick * 1 tsp all spice powder * 2 tbsp caster sugar * Generous splash of port Method 1. Combine all of the above and simmer for 1 hour until thick and sticky — add more port if required. You could add more sugar as well if you find this too tart but we are not trying to make cranberry jam here; the tartness works well against the richness of the turkey and ham. 2. Remember to watch over the sauce as it cooks, stirring every so often, so that it doesn’t stick. 3. When sauce is ready take off heat and allow to cool before transferring to a serving dish.
