Christmas Dinner Recipe: Cranberry and Plum Sauce – Every Christmas dinner deserves the sharp tangy flavour of fresh cranberry sauce, made that little bit special with the addition of some plums and a dash of port. To create the perfect accompaniment follow the recipe below. Ingredients * 250g cranberries (fresh) * 340g plums in syrup * 2 oranges (zested and juiced) * 1 cinnamon stick * 1 tsp all spice powder * 2 tbsp caster sugar * Generous splash of port Method 1. Combine all of the above and simmer for 1 hour until thick and sticky — add more port if required. You could add more sugar as well if you find this too tart but we are not trying to make cranberry jam here; the tartness works well against the richness of the turkey and ham. 2. Remember to watch over the sauce as it cooks, stirring every so often, so that it doesn’t stick. 3. When sauce is ready take off heat and allow to cool before transferring to a serving dish. I have these packs to make indian chicken recipes. I was going to make basic white rice, two types of chicken and just some spinach sauteed in garlic. For beer, he likes New Castle.

Make it with the kids and be as messy or as neat with it as you like, here’s a super simple recipe to try. Trifle Ingredients: 1 x 250g punnet of blackberries 1 x 250g punnet of raspberries 2 bananas, sliced Packet of trifle sponges 500g pot of good quality custard 285ml pot double cream, lightly whipped Hundreds and thousands for decoration Method: Layer a bowl with the trifle sponges. Layer the fruit over the sponge. Pour custard over fruit and sponge. Leave to cool completley before spreading the whipped cream over the top and topping with hundreds and thousands.

Christmas Dinner Recipe: Bread Sauce – Always a popular accompaniment to roast turkey, if only for lovely aromatic fug it sends up Ingredients: * 1 lt milk * 1 nutmeg — ½ whole, ½ grated. * 10 cloves * 2 red onions * 2 bay leaves * 250g breadcrumbs * 30g butter * 1 dollop of double cream * Salt and pepper Method: 1. Peel and cut onions in half and stud with cloves. 2. Place milk, nutmeg, onion and bay leaves into saucepan and season with salt and pepper. 3. Bring to the boil then remove from heat and allow to infuse in a warm place for 3-4 hours. 4. Later strain the liquid. 5. Stir breadcrumbs into strained milk and add ¾ of the butter. 6. Put sauce on a low heat, stirring occasionally until bread crumbs swell up and the sauce mixture thickens. 7. Remove from heat and stir in cream. 8. Pour into serving bowl and dot with butter. Christmas Dinner Recipe: Roast Potatoes – Christmas wouldn’t be Christmas without perfect crispy roast potatoes. I use a delicious blend of Scottish rapeseed oil and seasoning to give a slightly nutty flavour. Ingredients * 1 bag potatoes * Rock salt * Black pepper * Rapeseed oil Method 1. Peel and par (or partly) boil potatoes for 45 minutes until slightly soft. 2. Pat dry. 3. Place potatoes on a roasting tray covered in rapeseed oil, black pepper and rock salt. The potatoes will soak up oil. Leave for ten minutes then turn. 4. Roast in oven at a low heat for an hour before serving. When turkey comes out of oven turn heat down to 170° and leave to cook, turning occasionally.
